Did you know that Southern Pound Cakes have European roots? Dating back to the early 1700’s, this British creation made its way to America during its slavery era. The original recipe called for equal pound measures of ingredients. As slaves were not allowed to read, this simple recipe was easy to remember. In the absence of leaveners, slave cooks tirelessly whipped air into the batter. Years later, artificial leaveners were added to the batter so pound cakes could be made quicker using less manual dexterity.
