

Hummingbird Cake
Hummingbird Cake, at least by that name, is a relative youngster in the pantheon of Southern classics, but that makes it no less beloved. The triple-layer treat gets its dense richness from mashed bananas, pecans and crushed pineapple, and cream-cheese icing that's smeared top to bottom.
The Hummingbird Cake was “born” in Greensboro, N.C. in the late 70’s. Its southern-belle creator did not include an explanation of the cake's unusual name, which remains a mystery. Some say that this madly delicious cake is so named because you can’t resist humming while you eat it. Others say that this cake is akin to nectar- irresistible to the tiny hummingbird.
The cake probably has been around much longer by other names, according to the food history Web site, FoodTimeLine .org. It cites a 1985 Arkansas Gazette article that says the cake also was called Cake That Doesn't Last, Never Ending Cake, Granny's Best Cake and Cake That Won't Last.
