Slave cooks added freshly squeezed fruit juice to their cake batter for variety. While fruit was not a mainstay in Africa, they did have access to a few, including wild lemons. When the lemon began to appear in the American South, it was only a matter of time before cooks incorporated the flavor of fresh lemon into their cakes!
