Chess Pie belongs to a long Southern tradition of custard pies. Folklore offers several stories for the names origin. One is that the actual name is "chest" pie, as it was baked with enough sugar to store in a (non-refrigerated) pie chest. Another version attributes the name to a plantation cook who, when asked for the name, she responded "jes' pie" (just pie) in her southern drawl, which sounds like "chess" pie. The final thought is that the pie has European origins and that the name is a corruption of the word "cheese" which is what English curd pies were called.
